DAY 1: THEORY (from 10:00 AM to 3:00 PM CET)

The theory of ingredients composing a ganache To understand the composition of a ganache it is essential to have a clear understanding of the ingredients that compose it: what are they made of and what are they used for? How can we stabilize ganache in order to reach more stability and therefore better shelf life ?

Presentation and use of software "Ganache solution" This online tool will allow you to balance your own ganache recipes and understand better the taste, texture, structure, it gives you an indication on the shelf life. The software has been designed to work in an intuitive way, a smart tool that will avoid you to test your recipes several times. You will have free access to software during the whole class.

DAY 2 - 3: PRACTICAL SESSIONS (from 10:00 AM to 3:00 PM CET)

Creating your own recipes After studying the theory of ingredients together, I will create live different recipes thanks to the support of the software “ganache solution”. I will start with simple recipes to continue to more complexed one in their composition. The scope is to have stable recipes with great taste, perfect texture and structure. We will balance spice flavoured ganache, fruit, nut, caramel based and also vegan ganaches.

Tasting and report After a day of crystallization, the ganache will be analysing on their taste, structure and texture. I will give tips on how to improve the quality of your ganaches.

Q&A During the online class (3x 5 hours), you will be able to ask your questions live with a chat system, they will be answered live.
